    　　随着冬至节气来临，民间正式进入“数九”寒天。俗话说“进九吃鸡”，喝上一碗热气腾腾的鸡汤，既能驱散冬日的寒气，又能滋补身体，堪称冬日里实实在在的温暖慰藉。 　　不过，不知您是否留意到，同样是鸡肉，不同部位吃起来口感差异显著。鸡胸肉烹饪时容易变得干柴，而鸡腿肉即便长时间炖煮也不会软烂。这并非偶然，背后实则隐藏着鸡肉自身的“身份密码”。 　　鸡肉也分“短跑健将”和“耐力选手” 　　简单来讲，鸡肉依据肌肉类型大致可分为两种。鸡胸肉宛如鸡肉界的“短跑运动员”，学名为“白肌”。其颜色呈浅粉色，爆发力强但持久性不足，因此肉质鲜嫩，不过在烹饪过程中也容易流失水分，变得干巴巴的。 　　而鸡腿、鸡翅等部位的肉，则更像是“马拉松选手”，属于“红肌”。它们颜色更深，富含一种名为“肌红蛋白”的物质，耐力出色，肌肉纤维更为粗壮，中间还夹杂着一些脂肪和筋膜。这使得它们吃起来更有嚼劲、汁水丰富，尤其适合慢慢炖煮，越炖越香。所以，若您追求嫩滑口感，可选择鸡胸肉；若喜爱醇厚滋味，那就选鸡腿肉。 　　煎炸炖煮，火候改变鸡肉的“人生” 　　不同的烹饪方法，恰似为鸡肉规划了不同的“职业发展路径”。小火慢炖时，热量缓缓渗透，让肉质变得酥软，胶原蛋白融入汤中，成就了一锅香气四溢的“进九鸡汤”。 　　而高温油炸或烧烤，则能瞬间激发鸡肉的潜力。其表面会发生奇妙的“美拉德反应”，变得金黄酥脆、香气扑鼻，同时锁住内部的汁水，打造出外酥里嫩的绝佳口感。清蒸则最大程度地保留了鸡肉的原汁原味，吃起来格外鲜嫩。 　　解惑时间：骨头边的“粉红肉”能吃吗？ 　　啃食炸鸡腿或汉堡时，看到部分鸡肉呈现粉红色，许多人心中会犯嘀咕：这鸡肉熟透了吗？能放心吃吗？对此，江南大学食品学院教授张文斌表示：不必担忧，这通常属于正常现象。骨头导热较慢，其周围的肉受热温度相对较低，里面的色素可能未完全发生变化，故而会呈现粉红色。只要整块肉已经炸透、煮透，就可以安全食用；但如果鸡肉明显难以撕开那可能是尚未熟透，需要进行二次加热。 　　有时候，骨头表面还会出现一些褐色的痕迹，这通常是高温下产生的正常色泽反应，鸡肉的残留瘀血在加热时形成高铁血红蛋白，呈现暗褐色或黑色，并不影响食用。鸡肉是否变质主要通过是否有异味甚至黏液来判断，所以，下次再看到褐色的加热痕迹，您依然可以安心享用。 　　“进九”时节，美味鸡肉巧搭配 　　数九寒天，人体需要更多的能量。鸡肉富含高蛋白、低脂肪，是绝佳的温补食材。了解了鸡肉的特性后，其吃法就更有讲究了。若想喝上滋补暖身的汤，可选用耐炖的鸡腿或老母鸡；若想做一盘入味下饭的红烧鸡，鸡腿肉依旧是上佳之选；若是追求极致的鲜嫩口感，制作白切鸡，则应选用肉质细腻的嫩鸡。 　　从老祖宗“进九吃鸡”的养生智慧，到如今我们明晰背后的科学道理，一块小小的鸡肉，连接着传统与现代。这个冬天，不妨运用这些知识，为自己和家人炖上一锅美味的鸡汤，或者点上一份热气腾腾的外卖，暖身更暖心。 　　来源：扬子晚报 【编辑:付子豪】|dfg|
