    　　中新网广州12月27日电 题：广东台山“八爪鱼”尝鲜正当时 反复摔打肉质更爽口 　　作者 李晓春 郭军 　　“这段时间经常有本地海域的‘八爪鱼’上市，像这种个头和鲜活度的，在菜市场上一般每公斤要卖80至100元(人民币，下同)。近期我们从附近装笼的渔民手上收货都收到有‘八爪鱼’。”近日，广东台山市赤溪镇专营海鲜的何雅丽介绍说，秋冬季正是当地人吃“八爪鱼”的好时机。 　　据了解，“八爪鱼”又名“章鱼”，在台山的清光绪十九年(1893年)《新宁县志》卷八已有记载。“八爪鱼”是民间对其八条腕足特征的俗称，其富含牛磺酸、硒及铁元素，但胆固醇较高。在中国，北方地区多称之为“章鱼”，南方沿海更习惯称“八爪鱼”；而“小章鱼”通常指体型小的章鱼幼体或特定小型种类(如真蛸、短蛸)，“望潮”也是其中之一。 　　“今天我们一共上了10多公斤鲜活八爪鱼，8时许将海鲜分门别类摆好，每公斤卖96元的八爪鱼，不到半个小时就被抢购一空了。”近日，台山台城街道富城市场的海鲜档口负责人黄彩容透露，有耐心等候的顾客会要求将八爪鱼帮忙处理好再带走，有些心急的顾客要求称重、付款直接带回家自行处理。 近日，广东台山市，赤溪镇铁船号海鲜餐厅的服务员为食客挑选新鲜八爪鱼。李晓春 摄 　　“平时在我们那边的海鲜市场也见有八爪鱼卖，但多数是冰鲜的，鲜活的八爪鱼非常罕见。之前在台山赤溪镇白宵围钓鱼农庄尝过一次白灼鲜活八爪鱼，那脆嫩的口感和诱人的鲜度，明显优于冰鲜的。”来自佛山的游客梁贤辉在台山市广海渔人码头海鲜市场选购海鲜时表示，他计划将购买到的鲜活八爪鱼和其他海鲜带到码头附近的食肆加工，与同行的家人、朋友一起尝鲜。 　　“这鱼池筐里装着的是附近渔民用笼仔诱捕到的八爪鱼，你若不怕被它腕足的吸盘吸附，可以捉一只给你摸一下，但要小心它喷墨。”12月5日，台山赤溪镇铁船号海鲜餐厅的负责人林伟杰为客人点菜时介绍，对于鲜活八爪鱼，一般会建议客人选择白灼，这样可品尝到它自身的鲜甜味，然后上桌蘸酱油(可加芥末)吃；若喜欢入味点的，就建议选择姜葱炒的做法。 进入秋冬季，广东台山当地海域肥美的八爪鱼上市。李晓春 摄 　　“处理八爪鱼，力度要足、时间要够、方向要对。要抓住八爪鱼用力往地板或石块上摔打，重复10多次，这样能有效破坏其肌肉纤维，从而变得紧致脆嫩。整个摔打时间建议持续2分钟左右，尽量将其头部朝下，腕足部分要重点摔打。”林伟杰介绍说，经摔打处理的八爪鱼，需装入筛子加少许盐，尽量将表面的粘液搓洗干净。这种沿海居民熟知的处理方式，可令八爪鱼肉质更紧实、口感更脆嫩。 　　“今天的炒八爪鱼非常入味、爽口、弹牙，1公斤左右的鲜货炒成一大盘，大家试过之后赞不绝口，口感和味道相当不错！”从新西兰回台山探亲的伍俊良称，熟悉的家乡味道令他食指大动。 姜葱炒八爪鱼，是广东台山当地的渔村风味。李晓春 摄 　　遇到阳光足、北风大的日子，沿海渔民会选个头稍微大点的八爪鱼晒成干品，成品香味扑鼻，具有补气养血、产后补虚、养血通乳等功效，适合煲汤或煮粥，在台山海味店中非常畅销。 　　“这是台山本地渔民淡晒的八爪鱼干，又叫章鱼干。泡发后，可用来煲节瓜眉豆章鱼干汤、章鱼干莲藕花生汤、章鱼干木瓜鸡脚汤等，煲出的汤汁味道浓郁、入口鲜甜。250克规格一袋的，优惠价68元。500克规格一袋的更实惠，只需128元。”台山台城街道南昌街棠仔海味店的主播在微信视频直播间跟线上访客互动时介绍说。(完) 【编辑:惠小东】|dfg|
